Welcome to the sourdough course

Get to know the course and the steps ahead, from growing a starter to baking and tasting your sourdough.

Growing a natural yeast starter

Meet the starter: the natural yeast culture that helps your bread rise. See how to begin growing one for your own sourdough.

Feeding your starter

Once your starter is growing, it needs feeding. Follow the feeding process so you can continue looking after it.

Preparing the starter for sourdough

Prepare your starter before mixing the dough. See how caring for the starter leads into making your bread.

Sourdough ingredients

Go through the sourdough ingredients and prepare them before mixing, so you can follow the next steps smoothly.

Mixing and kneading the ingredients

Combine and mix the prepared ingredients into dough, ready for folding and shaping later.

Coil folding the dough

Watch the lifting and folding movements of a coil fold, used during the dough's resting stage before dividing it.

Cutting and dividing the dough

Divide the dough into portions for individual loaves. See how to handle and divide it before shaping.

Shaping sourdough

Shape each portion into a sourdough loaf. Follow the handling and shaping movements one step at a time.

Resting sourdough

After shaping, the dough needs to rest before baking. Follow this stage after forming your loaf.

Scoring the dough before baking

See how to score the surface before baking, giving the loaf a place to expand in the oven.

The first five minutes of baking

Put the sourdough in the oven and follow the first five minutes of baking before the next scoring and baking stage.

Scoring again and the second stage of baking

Continue from the first bake with another scoring step and a second baking stage, following the course sequence.

Examining the crumb and tasting the sourdough

Cut open the baked loaf to see its crumb and taste the result of the process you began with your starter.
